LAZY MINESTRONE SOUP


Since I worked this recipe out I'm pretty addicted to it as its so quick and yummy. It's not a try minestrone as it doesn't contain any vegetables hence the name "lazy minestrone soup". I have it for lunch when i am revising to keep me nice and full.


INGREDIENTS - Serves 2

25g of soup pasta
25g of lentils
25g of pearl barley
400g tin of chopped tomatoes
2 tsp mediteranian herbs
1 tsp of tomato pesto
2 tsp of basil pesto

METHOD

1. Put the chopped tomatoes in a saucepan and add enough water to bring it up to the volume of 1 litre and bring to the boil
2. Add the lentils, pearl barley, soup pasta, herbs and pesto.
3. Let it boil for 10-12 minutes or until the lentils and pearl barley are cooked.
