CHOCOLATE CHIP VEGAN COOKIES

After making banana bites and loving them i decided it was time to try baking some vegan cookies which sounded quite scary and would use some crazy ingredients but it turns out i had most of them in my cupboard apart from xanthan gum!I  adapted the recipe from this video but i didn't have any almond flour so i just blitzed 2 cups of almonds in the food processor. I also had not almond slivers so i just omitted them. I added more than 1/2 a cup of oil as i was worried about the mixture binding but it turns out i added too much and my cookies were very soft but still yummy. 

INGREDIENTS 
 1 cup of dark/unswetened chocolate chips 
1 cup of rolled oats 
2 cups of  almonds
1/4 cup coconut oil 
1/2 cup agave 
Pinch of Himalayan pink rock salt
3/4 teaspoon of baking soda 
1/2 teaspoon Xanthan gum 
4 tsp vanilla essence

METHOD
1. Put the almonds into a food processor and pulse for 20 seconds. Add the oats and blend to a chunky flour.
2.Add all of the dry ingredients to the bowl and stir.
3. Now add the wet ingredients and stir well.
4. Place a tablespoon of mix onto a baking tray.
5. Bake for 6-8 minutes or until slightly golden but still soft.
