SMARTIES BIRTHDAY CAKE

It was my best friend's birthday party yesterday. I had shown her a smarties cake a few months ago and she loved it and asked for one for her birthday. This cake looks quite impressive but it was so easy to decorate!

CAKE

225g Sugar
225g Butter
200g Self-Raising Flour
25g Cocoa Powder
4 eggs
1 teaspoon of vanilla extract

ICING

100g Softened Butter
300g Icing sugar
40ml Milk
40g Cocoa Powder

TO DECORATE

3 Packets of chocolate fingers
8 tubes of smarties

METHOD 

1. Cream the butter and sugar together until creamy. Add the vanilla extract.
2. Add the eggs one at a time with a tablespoon of flour in-between each egg. This stops your cake from curdling.
3. Add the rest of the flour and the coco powder and stir into the mixture. I use a whisk to make cakes so i don't tend to sift my flour as the whisk gets air into the batter very well.
4. Cook at 180°C for 20-25 minutes. If a skewer comes out clean your cake is done.
5. Whilst the cake is cooking make the batter but whisking the softened butter, icing sugar, cocoa powder and milk together.
6. When the cake is cooled add butter cream to the top of one of the cakes and sandwich them together. Then do a thin coat of icing around the whole cake to lock in any crumbs. After this coat the whole cake in icing. Place a chocolate finger onto he cake vertically and carry on making sure that they are tightly packed so that you don't have any gaps. I then placed some smarties on the top and pushed them into the icing in a colour pattern then i sprinkled the rest of my smarties on top to make the smarties look abundant and appealing.
